LentilSalad
Ingredients:-
1 cup dried lentils1 cup diced carrots1 cup diced red onions2 cloves garlic, minced1 bay leaf2 tablespoons lemon juice1/2 cup diced celery1/4 cup chopped freshparsley1teaspoon salt                                                 1/4 teaspoon ground blackpepper1/4 cup olive oil

Method:-
In a saucepan combinelentils, carrots, onion, garlic, bay leaf add enough water to cover by 1 inch.
Bring to boil, reduce heatand simmer uncovered for 15 to 20 minutes or until lentils are tender but notmushy.
Drain lentils andvegetables and remove bay leaf.
Add olive oil, lemonjuice, celery, parsley, salt and pepper.Toss to mix and serve atroom temperature.
