Man, does this ever take the edge off hunger pangs, like right now * snap *.  The mint changes everything you ever expected from a hand sandwich. The vietnamese places do this with spring rolls. The white end of the lettuce adds crunch. And I never use toothpicks either, that is to photograph it. 
With a little cream cheese for glue, or some other way to tie it, this would make an unobjectionable and surprisingly tasty canapé, cut up into three or four. 




Conclusion: Win. 
It is a good idea to have these items around anyway so you can have something fast without any cooking at all.
