Chocolate Mousse #SundaySupper

I am excited to be participating for the first time in #SundaySupper. This weeks theme is Valentines day!Is everyone ready for Valentines day? What are your plans? I personally love this special day. I am so blessed to be with my one true love, and I love that there is a holiday where we can celebrate our love for one another. It is also a great excuse to make something sweet for the family. For me, this day is all about chocolate, love and kisses.I used to think that Mousse was hard to make. It really isn't. You just have to pay attention to detail and be patient. If you do that, then it is really easy! I suggest making it the day before because it is best served cold. 


Just follow the steps in the recipe and you can have this wonderful dessert to serve to your family or your love. It takes time in between steps, but the amount of time you are actually working is very little.



This Chocolate Mousse is so smooth and decadent! It is definitely one of our favorites. Serve it to the kids with a big glass of milk and serve it to your hunny with a nice red wine. 



Chocolate Mousse
Adapted from Bon Appétit | February 2013

3/4 cup chilled heavy cream, divided

4 large egg yolks
1/4 cup espresso or strong coffee, room temperature
1/8 teaspoon kosher salt
3 tablespoons sugar, divided
6 ounces semisweet chocolate (61-72% cacao), chopped
2 large egg whites

Beat 1/2 cup cream in a medium bowl until stiff peaks form; cover and chill.





Combine egg yolks, espresso, salt, and 2 tablespoons sugar in a large metal or double broiler. (do not allow bowl to touch water). Cook, whisking constantly, until mixture is lighter in color and almost doubled in volume and an instant-read thermometer inserted into the mixture registers 160°F, about 1 minute.

Remove bowl from pan. Add chocolate; whisk until melted and smooth. Let stand, until room temperature.
Beat egg whites in another medium bowl on medium speed until foamy. With mixer running, gradually beat in remaining 1 tablespoon sugar. Increase speed to high and beat until firm peaks form.


Fold egg whites into chocolate in 2 additions; fold whipped cream into mixture just to blend.
Divide mousse among  4-ounce ramekins. Chill until firm, at least 2 hours
Before serving, whisk remaining 1/4 cup cream in a small bowl until soft peaks form; dollop over mousse.
